Acupuncture Mont Tremblant recipe

I don’t know why, but people often have the impression that acupuncturists are vegetarian.  Of course some acupuncturists are, but it has nothing to do with adhering to the precepts of Chinese medicine.  In fact, a diet including meat is an important part of what is known as Chinese Medicine dietetic; a.k.a ‘food therapy’.  Here’s a delicious recipe to provide balanced nutrition from a creamy soup of chicken, vegetables and wild rice.
I ‘ve been making this creamy chicken and rice soup in my slow cooker almost on a weekly basis this past winter. The worst of winter may have come and gone butI still crave it through the spring!  It’s full of veggies, can be dairy free, (Chinese Medicine does not recommend dairy) and can be gluten free too. For substitutions please refer to the notes at the end of recipe.
